JW Marriott Venice Resort Spa has announced the appointment of renowned chef and restaurateur, Fabio Trabocchi, as the new head of its Dopolavoro restaurant.
The move signals a new culinary concept for its premium fine-dining outlet.
The refreshed and renamed Fiola at Dopolavoro Venezia will take inspiration from Trabocchi’s acclaimed Michelin-starred US restaurant, Fiola DC, promising discerning diners a sophisticated yet luxurious ambience, coupled with striking architectural details dating back to the 1920s.
Trabocchi said: “The debut of Fiola at Dopolavoro Venezia is a significant milestone as it marks Fiola’s expansion internationally in the most magical city I know, as well as a personal homecoming as I announce my return to Italy after so many years abroad.
“We look forward to another exciting chapter for Fiola and are eager to offer the discerning guests at JW Marriott Venice Resort Spa signature dishes that incorporate local Venetian flare.
“Our menu was inspired by the city’s romantic atmosphere and we are thrilled to open the doors to our newest location.”
Nestled inside JW Marriott Venice Resort Spa complex on the peacefully private island, Isola delle Rose, guests at Fiola at Dopolavoro Venezia can anticipate dishes that combine seasonal ingredients locally sourced from Venice’s historic Rialto Market and the Adriatic Sea, as well as vegetables and exclusive olive oil from the private island’s own vegetable garden and olive grove.
